Low Carb California Dip
- 2 packages 8 ounces each cream cheese, softened
- 1 1/2 cups shredded white cheddar or Monterrey jack cheese
- 1 ripe black avocado peeled and seeded
- 1 small onion
- 1 tablespoons of lemon juice
- 1 clove garlic, crushed or chopped fine
- 1/4 to 1/2 cup of minced cilantro
- 1 teaspoon of salt (add more or less to taste)
- 1 can (3 ounces) green chilies, drained, use jalapenos for extra hot
- Combine all ingredients in a food processor until very smooth
- Serve in a super bowl and place avocado seed in middle to help keep from turning dark.
- If you are making ahead of time, only make it an hour before guests arrive and place plastic wrapt directly on the dip – let it actually touch the dip.
- Dip with protein chips, cheese chips, vegetables or even pork rinds for low carbohydrate options. You can also use this in omelets and over grilled meat just before serving!
