2010 Super Bowl XLIV Party |Miami Meatballs | Low Carb

  • 1 pound of ground beef or ground turkey
  • 2 eggs
  • 1 medium onion, finely chopped
  • 3 cloves of minced garlic
  • 2 teaspoons ground coriander
  • 1 tablespoon of chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2 tablespoons oil
  • 1 can of chopped or crushed tomatoes (about 14 oz)
  • 8 oz of tomato sauce
  1. Mix together the ground beef, eggs and half of the onion, garlic, coriander and salt.  Form into 2 inch balls.
  2. Heat the oil in a large skillet.  Brown meatballs.  Then add the tomatoes, tomato sauce, remaining onion, garlic, chili powder, cumin and stir in skillet.
  3. Cover and simmer over medium low heat for 45 minutes.

Yield:  4 servings, 15 grams of carbs, 12 grams is usable carbs, 3 grams of fiber and 24 grams of protein.
