- 1 pound of ground beef or ground turkey
- 2 eggs
- 1 medium onion, finely chopped
- 3 cloves of minced garlic
- 2 teaspoons ground coriander
- 1 tablespoon of chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 2 tablespoons oil
- 1 can of chopped or crushed tomatoes (about 14 oz)
- 8 oz of tomato sauce
- Mix together the ground beef, eggs and half of the onion, garlic, coriander and salt. Form into 2 inch balls.
- Heat the oil in a large skillet. Brown meatballs. Then add the tomatoes, tomato sauce, remaining onion, garlic, chili powder, cumin and stir in skillet.
- Cover and simmer over medium low heat for 45 minutes.
Yield: 4 servings, 15 grams of carbs, 12 grams is usable carbs, 3 grams of fiber and 24 grams of protein.
